Our mission is to celebrate the depth of domestic wines and the quiet power of koji—two expressions of craft rooted in patience, place, and care. We create dishes where fermentation leads the conversation, allowing natural flavors to unfold and evolve alongside thoughtfully selected local wines. By honoring traditional techniques and working closely with regional producers, we aim to offer an experience that feels both familiar and new—where every glass and every plate tells a story of origin, intention, and balance.
